Cinnamon Toast

INGREDIENTS

1 teaspoon of butter

1 free-range egg

¼ teaspoon ground cinnamon

¼ teaspoon vanilla essence

2 slices wholemeal bread

1 teaspoon maple syrup

METHOD

  1. Crack the egg into a wide, flat bowl and beat in the cinnamon and vanilla essence with a fork.

  2. Dip the bread into the egg mixture, making sure it is evenly covered.

  3. Melt the butter or coconut oil in a large heavy-based frying pan over a medium heat.

  4. Fry the bread in the pan for 3-4 minutes on each side, or until it is golden brown.

  5. Remove from the heat and place on a plate.

  6. Drizzle a little maple syrup over the toast. Cut it up into soldiers to serve.

This breakfast is best served warm with greek yogurt and berry compote.
