Berry Compote

INGREDIENTS

2 pears, peeled, cored and diced

50g Raspberries

50g blueberries

50g strawberries

50g blackberries

1-3 tablespoons light muscovado sugar

METHOD

  1. Place a saucepan over a medium heat and cook the pears for 10 minutes, or until they are soft

  2. Add the berries and cook for about 10 minutes, stirring to break everything down to a mush.

  3. Sweeten to taste with the sugar the amount will depend on how ripe the fruit is and which berries you use.

  4. Blitz it with a blender for about 45 seconds.

  5. Store the compote in the fridge in a glass jar for up to one week

This compote is perfect alongside some greek yogurt, pancakes or waffles. Your children may even love it on porridge or cereal before school.
