Fish Pie Bites

MAKES 8 BITES

INGREDIENTS

1 medium baking potato

1 small salmon fillet

1 tablespoon of frozen peas

1 teaspoon of fresh chopped chives

30g cheese

1 small egg

 

METHODS

  1. Preheat a fan oven to 180 degrees.

  2. Wrap the potato in foil. Place it on a baking tray and roast in the oven for 75 minutes.

  3. Take the baking tray out of the oven. Wrap the salmon in foil and place it on the same tray as the potato. Cook the salmon with the potato for a further 10 minutes.

  4. Remove the inside of the potato from the skin. Discard the skin. Discard the salmon skin and flake the meat. Remove any bones.

  5. Mash the potato then mix in the chives, salmon, cheese, peas and egg.

  6. Allow the mixture to cool before taking a golf-ball sized amount and form it into a small rectangle shape. Place the fish pie bites onto a baking tray and place them into the fridge for 30 minutes.

  7. Cook the fish pie bites in the preheated oven for 15 minutes.

  8. Allow to cool before serving to your child.
