Spinach muffins

MAKES 12 MUFFINS

INGREDIENTS

200g fresh spinach

100g cheese

1 tablespoon dried thyme

2 eggs

5 tablespoon Greek yoghurt

150g plain white flour

150g wholemeal flour

3 teaspoon baking powder

      Muffin cases – optional

 

METHOD

  1. Preheat a fan oven to 180 degrees

  2. Place the spinach in a food processor and blitz until it is shredded.

  3. Grate the cheese.

  4. Place the spinach into a bowl with the cheese and dried thyme.

  5. Crack 2 eggs into the bowl and add the yoghurt.

  6. Add in the flour and the baking powder. Combine all the ingredients.

  7. Line a muffin tray with paper or silicone cases. Or grease the tin with some butter.

  8. Spoon the mixture into the muffin tray and bake for 24 minutes.
