Pasta Sauce

INGREDIENTS

12 medium-sized tomatoes

1 red pepper

3 garlic cloves,

1 large courgettes

1 red onion

3 carrots  

1 tablespoon dried basil

1 tablespoon dried oregano

1 tablespoon olive oil

METHOD

  1. Preheat a fan oven to 180 degrees

  2. Chop up the tomatoes into quarters

  3. Remove the top and the seeds from the pepper. Chop it into small squares

  4. Peel and crush the garlic cloves

  5. Peel the onion. Cut it in half and in half again

  6. Peel the carrots and thinly slice.

  7. Thinly slice the courgettes

  8. Place all the vegetables into a deep oven proof dish and scatter over the dried herbs and olive oil. Cook for around 20 minutes.

  9. Using a handheld food blender or a food processor, blend all the ingredients until smooth.

  10. This sauce can be served to your baby with pasta or simply on its own. This sauce is perfect for freezing. Place the sauce into freezer bags or into ice cube trays for the perfect baby sized portions.
