Tzatziki and Flatbread
INGREDIENTS
For the Tzatziki:
4 heaped tablespoons plain Greek yoghurt
1 tablespoon cucumber
2 heaped teaspoons mint leaves
1 garlic clove
1 tablespoon lemon juice
Pinch of fine sea salt and black pepper
For the flatbread:
300g self-raising flour
½ teaspoon baking powder
150g natural yogurt
1 tablespoon vegetable oil
1 teaspoon salt
2 tablespoon water
METHOD
For the tzatziki, peel and finely dice the cucumber.
Finely chop up the mint leaves.
Crush the garlic
Add all of the ingredients together and stir thoroughly, place in a small bowl.
For the flatbread, combine the flour, baking powder, yogurt and oil with the salt and water, and bring together into a dough.
Tip onto a lightly floured surface and knead for a few minutes until slightly smooth, then divide into four to eight pieces, depending on the size of flatbread you want. Roll the dough pieces out on a lightly floured surface into rough ovals.
Heat a heavy-based frying pan over a high heat then fry each dough oval separately for 1-2 mins on each side until golden and slightly charred in spots.
Serve each flatbread with a small bowl of tzatziki.
