Frittata

INGREDIENTS

4 free-range eggs, beaten

90g Cheddar

Handful of peas

⅛ courgette

1 teaspoon mixed Mediterranean herbs

1 tablespoon olive oil

5 cherry tomatoes

METHOD

  1. Grate the cheddar and courgette. Chop the tomatoes into small pieces.

  2. Mix all the ingredients, except for the oil, together in a bowl.

  3. Preheat the oven grill to its highest setting.

  4. Place a small frying pan over a medium heat, add the olive oil and pour in the frittata mixture. Cook for a couple of minutes on the hob, then pop the pan under the grill to brown the top. This makes the frittata puff up.
