Lemon and Herb Chicken Strips

INGREDIENTS

2 chicken breasts

Zest of 1 lemon

2 tablespoon of mixed Mediterranean herbs

1 tablespoon olive oil

1 clove of garlic

METHOD

  1. Cut the length of one chicken breast, from the side, to create two flat strips. Repeat with the second breast. Place the slices on some parchment paper and scatter over half the lemon zest, garlic and herbs. Turn them over and do the same on the other side.

  2. Cover them with another piece of parchment paper and bash them with a rolling pin to tenderise them.

  3. Place a large frying pan over a medium heat, add the oil and fry the chicken for a few minutes on each side, or until cooked through.

  4. Serve inside a small pitta bread.
