Chicken Quesadilla

INGREDIENTS

1 garlic clove, crushed

1 tsp maple syrup

1 tsp soy sauce

1 chicken breast,

thinly sliced

1 tbsp olive oil

½ red pepper, diced

3 tbsp tinned sweetcorn

4 spring onions, sliced

4 soft tortillas

2 tbsp sun-dried tomato paste

50g cheddar cheese,

grated

METHOD

  1. Mix the garlic, maple syrup and soy sauce in a bowl, add the sliced chicken and leave to marinate for 5 minutes.

  2. Heat the oil in a large frying pan over a medium heat, add the chicken and fry until cooked through, then transfer it to a bowl.

  3. Add the pepper, sweetcorn and spring onions (or whatever veg you have chosen for the dish) to the frying pan and fry for 2-3 minutes.

  4. Add the mixture to the chicken in the bowl. Remove the pan from the heat and wipe it clean.

  5. Put one tortilla on a board. Spread with tomato paste and top them off with the chicken mixture and cheese.

  6. Place another wrap on top and press down.

  7. Repeat with the remaining two soft tortillas.

  8. Put the pan back over the heat and fry the quesadillas, one at a time, for 2-3 minutes on each side, until golden on both sides.

  9. Remove from the pan and slice each quesadilla into 6 wedges. Serve straight alway.
